Healthy entree ..... You can serve it with toasts or slices of Italian bread
Serves 10 servings
Ingredients
6 tablespoons olive oil
1 onion cut into cubes
2 cloves garlic, crushed
2 zucchini cut into medium cubes
2 eggplants cut into medium cubes
½ yellow pepper cut into medium cubes
½ green bell pepper cut into medium cubes
½ red bell pepper cut into medium cubes
6 tomatoes skinless and chopped seeds
2 tablespoons chopped basil
2 tablespoons chopped parsley
Salt to taste
Ingredients
In a saucepan, heat the oil and saute the onion and garlic.
Add zucchini, eggplant and saute for 10 minutes over medium heat.
Add the remaining ingredients, mix and saute for another 5 minutes. Serve immediately.
