Serves 4 portions
Ingredients
3 slices of bacon
4 eggs
1/2 cup (tea) diced cheese
1 tablespoon chopped parsley
1 tablespoon chopped green onion
Preparation
Chop the bacon and place in a frying pan.
Fry without oil until golden brown.
Remove from fire
Stir the eggs with a fork and add cheese, parsley and chives.
Season to taste, being careful with the salt, because the bacon is already salty.
Pour this mixture over the bacon in the frying pan and bring it back to the low heat for frying, always sticking with a spatula so the raw egg can go to the bottom of the frying pan.
When the fry is golden on one side, let it slip onto a plate and turn back to the frying pan to fry on the other side.
Slide onto a plate and serve.
